Beef fillet with Molise mushrooms and truffles: a perfect combination for the palate

Difficulty: simple;

Cost: medium;

Preparation time: 15 minutes;

Ingredients for 2 people:

Porcini mushrooms: 500 grams;

Beef fillets: 4 pieces (approx. 1kg);

Garlic: 2 cloves;

Lamb's lettuce and black pepper: to taste;

Extra virgin olive oil: 5 tablespoons;

Salt and black pepper to taste;

1 sprig of fresh rosemary;

Butter: 2 tablespoons;

Chopped parsley: 15 grams;

1 tablespoon of truffle cream;

Fresh truffle.

Preparation:

Prepare the mushrooms: clean the mushrooms and slice them horizontally. Place 3 tablespoons of extra virgin olive oil in a non-stick pan with garlic and sauté, then add the mushrooms. At this point, add salt, pepper, chopped parsley, and truffle shavings. Once everything is covered with a lid, let it rest.

Prepare the meat: remove the beef fillets from the refrigerator about 30 minutes before cooking, so they can reach room temperature. This will help them cook evenly. Tie each fillet with kitchen twine and pour olive oil into a non-stick pan, then brown the meat. Cook the meat over high heat for about 5 minutes per side.

Season the meat: brush the fillets with a drizzle of extra virgin olive oil and sprinkle with salt and black pepper to taste. If you want to add an aromatic touch, you can also rub a sprig of rosemary on the meat.

Prepare the truffle seasoning: while the meat is cooking, mix the butter with Dast Truffle black truffle cream. This combination will give a creamy and rich truffle touch that will perfectly complement the meat.

Let the meat rest: once cooked, remove the fillets from the grill and let them rest for about 5 minutes. This will allow the juices to distribute evenly, keeping the meat tender and succulent.

Plate the dish: slice the meat into thin slices, like for a tagliata, and arrange it on a bed of lamb's lettuce. At this point, add the porcini mushrooms and spread the truffle butter over the meat for a richer and more aromatic flavor.

Garnish with fresh truffle: to make the dish even more refined, grate fresh truffle over the meat, so that the truffle's aroma spreads over every slice of beef. The fresh truffle will provide a final touch that will make this dish an unforgettable gastronomic experience.
