Truffle polenta is the perfect dish for rediscovering traditional cuisine, revisited with a touch of flavor that only truffles can provide. Made with cornmeal and cooked simply, polenta becomes the perfect base for the flavor of truffle, which enriches every bite with its enveloping aroma.

Ingredients for 2 people:
250g of polenta (preferably high-quality polenta, such as coarse-grained polenta);
50g butter;
50g grated Parmesan cheese
1 tablespoon of truffle cream and fresh truffle to taste;
Salt and black pepper to taste;
1 liter of hot vegetable broth (or water, if you prefer a lighter version).
Preparation:
Prepare the broth : Bring a liter of vegetable broth or water to a boil in a large pot. The broth will flavor the polenta and make it richer. While the water reaches the desired temperature, you can prepare the Parmesan cream.
Cooking the polenta : Slowly pour the polenta flour into the hot broth, stirring constantly to prevent lumps from forming. Continue stirring for about 30-40 minutes, until the polenta is soft and firm (follow the package instructions for cooking times, as they may vary).
Stirring the polenta : Once the polenta is ready, add the butter and Parmesan cream, stirring well to combine. The polenta should be creamy and well-combined.
Add the truffle : At this point, you can add the truffle cream to flavor everything. If you prefer to use fresh truffle , grate it finely and add it to the polenta, stirring gently to combine well.
Season and serve : Season with salt and pepper to taste, then divide the polenta among serving plates. If desired, grate additional fresh truffle over each serving to further enhance the aroma.
Garnish : If you want to make the dish even richer, you can add a small knob of butter on top of the polenta before serving, or a little grated Parmigiano Reggiano for an extra touch of creaminess.
