The Summer Truffle, commonly called Scorzone, is a variety of black truffle common in Italy and Europe, known for its delicate and pleasant aroma.
The rind is brownish-black and rough, with pyramidal warts, while the internal flesh changes from pale white in less mature specimens to light hazelnut when ripe.
It is harvested from early May to the end of August in many Italian regions, mainly Umbria, Marche, Tuscany, Abruzzo and Molise.
Its aroma is gentle, with notes of mushroom and hazelnut, making it versatile in the kitchen. It is ideal with tagliolini, risottos, eggs or salads, but can also be used in light sauces and dressings. Harvested between May and September, it grows under oaks, hazelnut trees and beeches, on well-drained calcareous soils.
The Scorzone is the perfect choice for those who want to approach the world of truffles, bringing authenticity and summer flavour to the table.
